Recipe: How to cook Thai basil chicken at home? Pad Krapao easy made ผัดกระเพราไก่
Pad Krapao Gai (ผัดกระเพราไก่) also known as Stir fried chicken with garlic, chili and basil is one of the most well know and famous Thai dishes I know, besides Pad Thai. It is very easy to cook and most of the Thai people I know always order this dish when they don’t know what to order. So if you ever don’t know what to eat, you should go for that.
It is spicy, fragrant from the chilies & garlic, a little sweet from the oyster sauce and the basil and also salty given by soy sauce and fish sauce.
It is typically served with rice and comes often with a fried egg which is called Kai Dao (ไข่ดาว). As some of my friends asked me how to cook pad krapao, I thought about to make a video because it is easier to cook it at home while watching it.
Note: There are two kinds of Thai basil, one of them is called Bai Horapa (ใบโหระพา) also called holy basil which has purple stems and the other one is called Bai Krapao (ใบกระเพรา), also called as Thai basil. The one you need for this recipe is Bai kapao. But if you can not find it you can use any kind of basil which your Asian grocery shop has to offer.
I couldn’t find Thai basil neither holy basil in Taipei so I used the local Taiwanese basil for that.
The ingredients you need for this recipe is:
- 5 gloves of garlic
- 2-8 red bird eye chili
- a handful of Thai holy basil
- 100g of long beans (or any kind of green beans will do)
- 500 g of minced meat (I prefer to use chicken or beef)
- 2 Tbsp. of Oyster sauce
- 2 Tbsp. of Soy sauce
- 1 Tbsp. of Fish sauce
- 1 Tsp. of sugar
Before you start cooking, prepare everything you need and if you have a morter and pestle, it is time to use it. You want to get the garlic and chili flavor out of it and smash it. Believe me, it makes the difference!
Cut the beans and tear the basil leaves and put them aside.
Toss the garlic and the chilis inside your morter and smash them until the juice of the chili and garlic has come out.
Heat up your pan with some oil and fry the garlic&chili mixture a bit (for 1 minute) before you add the minced chicken.
Fry them until your meat is almost done and add your chopped beans. Fry them only for a few seconds because you want the beans to be crunchy, then you can add the oyster sauce, fish sauce, soy sauce and sugar. Your self made pad krapao is almost done. In the end you add the holy basil and turn off the heat. You can let it fry with the residual heat from your pan. The basil will shrink and it will release their flavor to your dish.
Serve this dish with some hot jasmine rice and a fried egg on top of the rice.
