How to make Thai stir-fried Morning Glory (Pak Boong Fai Daeng) ผัดผักบุ้งไฟแดง

This dish is very easy to cook and you need less than 10 minutes to prepare it. This easy made dish is called Pad Pak Boong Fai Daeng (ผัดผักบุ้งไฟแดง) which literally means red fire water spinach.
This water spinach dish is quite salty because of the soybean paste which is the main flavor in this dish along with oyster sauce and is often served as a side dish along with many other dishes.

Ingredients:

  • Waterspinach ผักบุ้ง
  • 2 cloves of garlic 🧄
  • 1 red eye chili 🌶 (Optional if you don’t want it spicy)
  • 1 tsp of sugar
  • 1 Tbsp of soy bean paste
  • 1 Tbsp of oyster sauce
  • little dash of water (espresso cup)

If you got everything ready cut the water spinach in 2 cm stripes and also the garlic and chili to have it ready before you cook because this goes really fast. Prepare 1 tablespoon of soy bean paste and 1 tablespoon of oyster sauce on the chopped morning glory to save some time.
Set up the fire on maximum and put some oil into your wok. As soon as it is hot go in with the chopped chili and garlic and fry them a bit for about 5 seconds. Right after that, toss in the morning glory with the prepared sauce and fry them again for 30 seconds on high fire before you add some sugar (1 teaspoon) along with a dash of water.
Your Thai fried morning glory you dish is ready to serve with a bowl of rice 🍚 .

You can combine this dish with many other vegetables you like, e.g. Chinese Kale or Broccoli 🥦 .
